Righteous tofu pudding in under 5 minutes

tofu_pudding1.sidebar.jpgOne of the things I like to do with tofu that didn't quite come together is to turn it into a pudding. Now I do not pretend to you that this tastes like a proper pudding or mousse made with cream and such, and if anyone tries to convince you that a tofu based dish like this is 'just as good/rich as the real thing' they are either lying or have no taste buds. It's different, but still good. It's a lightly sweet, cool and creamy dish that will quiet a sudden urge for Something Sweet. Since it's quite healthy it will leave you feeling righteous, thus the name.

It's also a dish that you can whip up in no time at all. I realize that many of the recipes here take a lot of time, effort or both, and I'm going to try to rectify that. Look for recipes with the quickcook or under 10 tags.

Righteous tofu pudding

  • 1 cup of mashed up fresh tofu (a small block of either silken or firm tofu, or a mixture)
  • 3 Tbs maple syrup, sugar, or sweetener of your choice (see notes)
  • Flavoring: a few drops of vanilla extract, almond extract, or 2 Tbs. cocoa powder (optional)

If the tofu seems a bit watery, squeeze it lightly in a non-terry cloth towel or several layers of paper towel.

Place the tofu, sweetener and flavoring in a blender and blend until totally smooth. If you don't have a blender, push it through a fine meshed sieve or mash it up as fine as possible with a fork.

Serve cooled with optional extra syrup, honey etc. on top if you so desire. The one in the photo is flavored with maple syrup with additional maple syrup on top.

Notes

Try to use a superfine sugar - granulated may be a bit gritty. You can of course use an artificial sweetener.

Silken tofu will make a rather loose pudding, while firm tofu will make a more substantial pudding.

I tried mixing the tofu with overripe bananas and raisins. Awesome! It made a good breakfast, too.

i've made it with extra firm silken tofu blended with melted chocolate. wonderful.

I was just wondering, how many serves does this recipe make? =\

It would make 4 1/4 cup servings, or 2 1/2 cup servings, or 1 big 1-cup serving...depending on how you want it :)

I make tofu pudding by adding a little of cocoa powder too. It gives it a nice chocolate flavor =]

Just started making my own bentos since I need to start to get my food habits in shape (not that I eat badly, but I go to gym frequently and the lack of certain nutrients is killing my whole training) and this site is a blessing!

My first attempts all involved TOFU since I bought 2 KG of the "thing" (as everybody at my home describes it at least) and serves me twice since I both hate meat and it offers good protein I need badly.

After almost killing myself with an overly spicy vegan Mabo Dofu (as I said, meat is a no go for me) and having some trouble making round tofu-tuna-miso burgers (they tasted WONDERFUL, but getting them on the right shape was a bit of a pain) I found this recipe and absolutely LOVED IT! Tried a few variations with numerous fruits I had laying around + vanilla and they all turned out MARVELOUS after a good couple of hours on the fridge to cool down.

Can't stress enough how much I adore your blog, please keep up the good work!

Delicious! I made it with some maple syrup and added homemade zucchini/apricot preserves, I also added ground flax seed. I used firm tofu (it's more nutritious) but I had to add quite a bit of liquid (I used almond milk) to loosen it up, it would have been much too thick otherwise.

We're thinking about making this for a fundraiser event, do you know how many servings the recipe makes? Looks like two 1/2 cup servings.

Googled tofu pudding as I want to replace regular pudding in a layered dessert served in a large clear glass goblet. I will start with a gluten-free cake layer, a layer of tofu pudding (I believe I will make vanilla), and a layer of fresh blueberries and raspberries. The layers will be repeated until the goblet is full. Doesn't it sound beautiful and also delicious? I used to make this with regular cake and pudding, but having raised my consciousness level, am clearly making smarter choices. Thank you!

That's what I'm after, too! This kind of dessert is called a trifle, and is so perfect with fresh summer fruits. I'm off to the store...!

I eat meat, and gluten, etc. I eat like crap also. Today the only meat I had was a sausage patty. But besides that my breakfast, lunch, and dinner has been all fruits and veggies, so I decided to try this out since I did decide to buy tofu. I made it with cocoa, vanilla, and sugar, and extra firm tofu....I like it!
